Learn to Make a Simple Pasta Dish with Complex Flavor

A nice steamy plate of pasta is hard to beat, especially once the fall weather has arrived. Chef Mark Sparacino stopped by Studio 512 with a recipe for awesome. Fusilli Calabrese is the name of the dish we cooked up. Fusilli is the corkscrew pasta we used, and calabrese are little peppers. We started with shrimp and broccolini, then added the calabrese in oil with bell peppers in a skillet to cook. We added some sliced garlic along with a touch of salt and pepper for seasoning. After that, we added shrimp stock and butter to make a simple sauce. To finish out the dish we added a bit of mint and grated parmesan after it was plated. Sophia’s is located at 500 W 6th Street. It opened about 2 months ago, and transitions from a restaurant to a supper club at 10 pm.  Go to sophiasaustin.com for more information or give them a buzz at 512-580-9990.
