Learn to Make Carnitas Tacos

We are getting a kick out of Texas Books. Mando Rayo is one of the many authors who will be at the upcoming Texas Book Festival. He dropped by to cook up a recipe from his book, The Tacos of Texas. We made a taco using slow-cooked carnitas, orange slice, thyme, garlic, cinnamon, bay leaves and evaporated milk. This tasty mixture is spread across a corn tortilla, and then topped with a simple green salsa. To make the green salsa, you only need jalapenos, canola oil, garlic, onion, salt and water. The Texas Book Festival is happening on the ground of the State Capitol on Saturday and Sunday, Nov. 5th and 6th, from 10 a.m.- 5 p.m. each day. For more information go to texasbookfestival.org.
