Googly Eyed Over Pumpkin Whoopie Pies

Executive Pastry Chef Laura Sawicki stopped in with a darling and festive treat that isn’t tricky to make. Pumpkin Whoopie Pies are a fun, and creative, Halloween-inspired dish. Mix the wet ingredients below, then combine with the dry ones. Use an ice cream scoop to make uniform size dough. You can refrigerate the dough to prepare in advance for parties. After they’re baked, Chef Laura used frosting to put the whoopie pie together. She suggested refrigerating them overnight to allow the frosting to set prior to decorating. She added candy corn for teeth/ fangs. She also used black strips of licorice for limbs and made eyes out of icing- creating lil monsters. Fresa’s has a new location on south 1st. Ingredients include:

1/2 c granulated sugar

1 1/2 c light brown sugar

2 Tbsp molasses

1 c vegetable oil

3 c pumpkin puree

2 eggs

1 tsp vanilla extract

3 c all purpose flour

2 Tbsp ground cinnamon

1 tsp ground ginger

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1/4 tsp fresh nutmeg
