How to Make Ceviche and Help a Great Cause

Women definitely hold their own in Austin’s awesome food scene. You can support these fabulous females at an upcoming event. Chef Iliana de la Vega of El Naranjo stopped by to tell us more about the Les Dames D’Escoffier of Austin’s “En Garde! Food Fight!” that takes place Sunday, October 23. The event raises money for scholarships and grants for Austin women in the culinary, wine, food artisan and hospitality professions. She also showed us how to make a simple ceviche. You start with raw tuna, salt it and coat it liberally in lime juice. You’ll see the meat change in color as it cures. Then add in some fresh herbs like cilantro, basil and a little mint along with red onion, green olives, capers and avocados. The event takes place on October 23 from 5-8 pm at the Barr Mansion.
