How to Make a New Twist on Fried Chicken


I love to make a meal out of luxurious little snacks like nice cheeses, olives and gourmet nuts. Why not add something fried to the mix every now and then?
Darren Van Delden of St. Genevieve dropped by to show us how they execute one of their upscale menu selections. We made Mumbai fried chicken which you can find on their appetizer menu. Several cubed pieces of pickled watermelon sit at the bottom of the dish and is then topped with the fried chicken tenders. We drizzled St. Genevieve’s tamarind chutney over the chicken, sprinkled some coconut shavings on top and added a few herbs for taste and color.
