Snack Food Gets Healthier with Carrot Hummus

Bar food got a healthy twist when Chicon’s Chef De Cuisine PJ Edwards brought his recipe for carrot hummus to the studio. The dish starts with roasted carrots that are well chopped and add olive oil, lemon zest, roasted garlic, lemon juice, roasted tomatoes and herbs and simply puree in a food processor. Then it’s served up with Parker House rolls.
