Watermelon + Feta Bites
Servings: 24 cubes
Prep Time: 10-15 minutes

Ingredients

  • 24 small cubes of watermelon about 1/2 a small watermelon
  • 24 small cubes feta cheese about 1 cup
  • 24 large fresh mint leaves about 4 sprigs

Instructions

  • Place cubes of watermelon out onto a serving dish.
  • Top each one with a mint leaf followed by a cube of feta cheese.
  • Next add a toothpick to each square for easier serving or just serve as is.


Summertime Flavored Waters
Servings: 4 -6 servings
Prep Time: 10 minutes

Ingredients

For strawberry lemon

  • 2 quarts cold fresh water
  • 1 cup fresh strawberries sliced
  • 1 medium lemon sliced

For cucumber mint

  • 2 quarts cold fresh water
  • 1 cup cucumber sliced
  • 3 sprigs fresh mint

For orange thyme

  • 2 quarts cold fresh water
  • 1 large orange sliced
  • 2 sprigs fresh thyme

Instructions
For each water combination above, combine the ingredients together and serve well chilled or over ice.


Tzatziki Orzo Salad
Servings: 4 -6 servings
Prep Time: 10-15 minutes
Cook Time: 6-8 minutes

Ingredients

  • 1 pound orzo pasta
  • 1 large cucumber chopped
  • 1 cup plain greek yogurt
  • 1/2 cup green onion chopped
  • 1 small jalapeno seeded and minced
  • 2 Tablespoons fresh dill chopped
  • 2 Tablespoons fresh mint chopped
  • 2 Tablespoons fresh cilantro chopped
  • 1 medium lemon juice
  • 1 teaspoon garlic minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup feta cheese crumbled

Instructions

  • Cook orzo according to directions and set aside to cool completely.
  • In a large bowl combine yogurt, lemon juice, garlic and salt and pepper well.
  • Next add in the cooked orzo pasta, cucumbers, dill, mint, cilantro, jalapeño, and green onion and stir together gently until well combined.
  • Finally stir in feta cheese and serve.
