AUSTIN (KXAN) — The recent Blue Bell recall has brought to light what steps businesses will take to make sure their customers are safe. While gelato shops are in the business of making people happy, they still have to follow strict guidelines.
“I’m a little biased,” said Marco Silvestrini, owner of Austin gelateria Dolce Neve. “But I’ll say, usually gelato is more flavorful than ice cream!”
But just as important as tasty gelato is safe gelato.
The small business takes extra precautions to keep their product safe for customers. They have individual lids over the gelato, and use a different spatula for each flavor to keep customers safe.
“Sanitize all the machines, all the tools and all the tables,” said Silvestrini. “Need to make sure everything is clean.”
They must sanitize between each batch, which is about 30 times a day.
“Just need to be really careful when you deal with ingredients,” Silvestrini says.
As a small operation, Silvestrini says it’s easier for Dolce Neve to oversee every step in the process. But he believes the Blue Bell recall is a good reminder for everyone.
“It should make all the businesses aware that there is a risk, and to do all they can to avoid anything like this from happening.”
Dolce Neve is also required to use pasteurized ingredients, like milk and eggs.
