Trail Mix Energy Bars

It’s a good idea to pack a healthy snack when you head out on your next hike or bike ride.  Elizabeth Van Huffel of Local Savour brought in this yummy recipe for bars you can make ahead of time then grab on the go.

Trail Mix Energy Bars

Prep time: 10-15 minutes, Servings: 8-10, Cook time: 20-30 minutes.

2 cups rolled oats, 1 1/2 cups peanut butter at room temperature, 3/4 cup brown rice syrup, 1 cup mixed nuts (Elizabeth used almonds & pecans), 1 cup dried fruit (Elizabeth used golden and red raisins), 1/2 cup mini chocolate chips, 1/2 cup shredded coconut, 1/4 cup pumpkin seeds, 2 Tablespoons honey, 2 Tablespoons hemp seeds, 1 Tablespoon sesame seeds (black or white or both), 1 teaspoon ground cinnamon

Line a 9×9 pan with parchment paper and set aside.  Preheat oven to 350 degrees.  Add all ingredients to a large bowl and mix together until well incorporated.  Once well combined, pour oat mixture into the lined pan.  Spread mixture out evenly and press down firmly around the entire square.  Place into oven and cook for 20-30 minutes or until lightly golden on the outside and firm in the center.  Remove from the oven, press down firmly on the bar mixture again and let it cool completely.  Once cooled, cut into 8-10 bars and wrap individually or serve. provides commenting to allow for constructive discussion on the stories we cover.
