Recipe: Summer nectarine salad

AUSTIN (KXAN) — We’re celebrating the 830th anniversary of Gouda cheese. Gouda is a Dutch cheese named after the city in the Netherlands. It’s one of the most popular cheeses in the world, accounting for 50 to 60 percent of the world’s cheese consumption.

Tiffany Cunningham, a certified cheese professional and cheese buyer at Whole Foods, shows us how to use Gouda at home.

Summer Nectarine Salad


  • For the salad:
    Baby spinach,
    Very ripe nectarines, sliced very thin
    Toasted walnuts
    Diced Gouda cheese
  • For the dressing:
    1 large handful fresh basil
    2 tablespoons extra-virgin olive oil
    1 tablespoon balsamic vinegar
    ½ teaspoon pure maple syrup
